At the festival's closing dinner, we will enjoy a range of exceptional Chablis, both in its maturity and youth. We will begin with a mini-selection of mature vintages from the legendary Daniel-Etienne Defaix, and continue with outstanding Chablis brought by yourselves.

What is this thing called Chablis?

In the wide world of Chardonnays, Chablis is a unique individual, without equals. It’s born in the cool climate, in fossil-rich soils, in steel tanks and, more frequently than one might expect, also in oak barrels. It is a cold-blooded, restrained individual, infused with a steely minerality, hints of chalk and sea, a character that is in no way similar to its Burgundy cousins. Chablis tastes nothing like its flashy sister, Meursault, or the lean Puligny. Chablis also lacks the traits of New World Chardonnay, pampered in new oak barrels, and has nothing in common with the sun-soaked Old World Chardonnays. One could even say that in character, Chablis is much closer to its northern neighbor, Champagne, for example, a mature Blanc de Blancs or a 100% Chardonnay Champagne. Right?
